For 6 people as a main meal
400g of bread – anything from sliced pan to crusty loaf will do
600ml milk
2 eggs
1 onion or 4 scallions or 1⁄2 leek – chopped
Any combination of the following vegetables
6-8 mushrooms sliced
1 pepper chopped
3-4 tomatoes chopped
1 cup of frozen peas
Tear the bread into small chunks by hand and place in a large bowl.
Whisk together the milk, eggs, salt and pepper until mixed. Pour this over the bread pieces. If you have time, leave to soak for half an hour or so.
While you’re waiting fry the onion (scallions or leeks) in some vegetable oil for 3-4 minutes.
Add in the mushrooms and peppers (or whatever vegetables you have) and fry for another 5 minutes stirring regular, so the vegetables don’t burn.
Spread the bread and milk/egg mix into a baking tin or oven dish (the mix will expand on cooking so make sure there is extra room in the dish).
Top with the fried vegetables and stir lightly into the bread mix.
Sprinkle with the cheese.
Bake at 180oC for about 40-45 minutes.
Leftovers should be stored in the fridge (once cooled) and will keep for 2-3 days. Can be eaten cold or individual portions heated in the microwave.
